Featuring a powdered high-speed steel (SG2) core, this knife uses one of the highest-grade stainless steels found in premium Japanese kitchen knives. It delivers exceptional sharpness and outstanding edge retention.
The blade also features a beautiful 63-layer Damascus pattern, along with a hammered (Tsuchime) finish that helps reduce food sticking to the blade while cutting, improving both performance and appearance.
About Powdered High-Speed Steel
Recent advancements in steelmaking technology have enabled the production of steel powder by rapidly cooling molten steel into a spray form. This powder is then compacted, sintered, and processed through forging and rolling, known as powder metallurgy. Unlike traditional methods, this process creates steel with a uniform and fine structure, free of segregation. It also allows for higher amounts of alloying elements, resulting in a high-performance blade steel.
Powdered high-speed steel meets all essential requirements for knife steel: high hardness, high toughness, excellent wear resistance, and superior corrosion resistance.
To preserve its exceptional sharpness and performance, it is recommended to maintain the blade with a whetstone. Professional sharpening is also recommended when necessary.
